You’ve tasted sweet and sour chicken at the takeaway, but you can make it far better at home and it’s much healthier! This Sweet and Sour Chicken combines crispy chicken with chunks of onion, bell pepper and pineapple in a sticky homemade sauce. Serve it in rice bowls for a quick weeknight dinner.
Ingredients
Chicken:
- 1 pound boneless skinless chicken thighs, cut into 1-inch pieces, or chicken breasts
- 1 teaspoon salt
- 1/2 cup cornstarch
- 1 1/2 cups flour
- 1 egg, beaten
- 1 tablespoon oil, canola oil or similar
- 1 ¼ cups water
- vegetable oil, for frying
Vegetables:
- 1 red bell pepper , cut into 1″ pieces
- 1 green bell pepper , cut into 1″ pieces
- 1 medium yellow onion , cut into 1″ pieces
- 1 tablespoon oil, canola oil or similar
- 1 cup pineapple chunks, fresh, or canned/frozen
Sweet and Sour Sauce:
- 1/2 cup sugar
- ¼ cup rice vinegar , or white vinegar
- 2 teaspoon garlic, minced, or garlic powder
- 2 tablespoons soy sauce , low sodium recommended
- 1/4 cup ketchup
- 2 tablespoons cornstarch, mixed with 2 tablespoons water
